This quick-and-easy sandwich recipe possesses a distinct flavor profile and looks beautiful when plated. The juicy chicken breast stuffed with avocado connects with the blackened feel of Gustus Vitae's Taste of Cajun to present spicy yet soft notes. Ingredients

  • 4 Ciabatta Buns
  • 6 Bacon strips
  • 2 Avocados
  • (4) 4-Ounce boneless chicken breasts
  • Spinach
  • Taste of Cajun seasoning
  • 2 Tbsp. Mayo
  • 1.5 Tbsp Sriracha

Preparation

  1. Combine Sriracha and Mayo together, set aside and place in refrigerator
  2. Preheat oven to 400 degrees
  3. Place bacon in oven for 20 minutes (on lined backing sheet)
  4. While bacon is cooking, slice 1/4” strips into each chicken breast and generously season or rub Taste of Cajun mixture into meat
  5. Grill or pan-fry chicken until cooked through
  6. Remove bacon and toast Ciabatta buns in oven for 1 minute
  7. Remove Ciabatta buns and layer sandwich (Sriracha-Mayo, spinach, bacon, chicken breast)
  8. Slice avocado and place into strips cut onto each chicken breast
  9. Place top bun on sandwich and enjoy!

Chicken Drumettes are great for a party or gathering of foodies with an appetite for finger food.  These are easy to prepare and absolutely delicious.  They offer a Thai twist on the classic "wings" your guests will find everywhere else. This recipe was developed by Watcharee Limanon, a Thai culinary artist trained in Bangkok. She trained at the Mandarin Oriental Hotel and Le Cordon Bleu Dusit Culinary School in Bangkok.  There were so many requests for Watcharee's traditional Thai recipes that she created her own line of spectacular sauces.  You will love this recipe!

Ingredients

  • 2 pounds chicken drumettes
  • 1 1/4 cup Watcharee's Pad Thai Sauce
  • 1 cup deep fried crispy shallots (available in Asian Grocery Stores)
  • 1/4 cup rice bran oil (or other healthy oil)

Preparation

  1. Marinate chicken drumettes in 1-cup Watcharee's Pad Thai Sauce for 30-minutes in refrigerator. Reserve 1/4 cup Watcharee's sauce to drizzle drumettes before serving
  2. Preheat the oven to 450-degrees
  3. Remove the chicken drumettes from refrigerator and let stand at room temperature before cooking. Heat grill pan on medium heat for 3-5 minutes to prevent sticking and brush pan with oil. Grill chicken drumettes until brown crispy stripes form on each side
  4. Bake marinated chicken on a baking sheet lined with foil and sprayed with oil for 30-35 minutes until the skin is caramelized and the chicken is cooked through
  5. Drizzle reserved 1/4 cup Watcharee's Pad Thai Sauce over drumettes before serving and sprinkle with crispy shallots

Love fish but tired of the same old recipes?  Baked cod is a healthy and mild fish loved by almost everyone.  Add roasted vegetables served with the amazing pad Thai sauce created by Watcharee Limanon and you have a fast, nutritious and absolutely delicious dinner.  This recipe is great for quick weeknight dinner with minimal cleanup required.  Or dazzle guests without stressing over a complex recipe.  Even a novice in the kitchen will have good results every time with this recipe created by extraordinary chef Watcharee!

Ingredients- Baked Cod

Ingredients - Roasted Vegetables

  • 3 tbs. rice bran oil or other healthy cooking oil
  • 2 large tomatoes, sliced
  • 2 yellow zucchini, sliced
  • 2 medium carrots, sliced
  • 2 medium eggplants, sliced
  • ½ tsp. freshly ground black pepper

Preparation - Roasted Vegetables

  1. Preheat oven to 400°F
  2. In a large bowl, toss tomatoes, zucchini, carrots, and eggplant with oil and black pepper
  3. Transfer to a baking pan and roast in the oven for 20-25 minutes, until browned and tender

Preparation - Baked Cod

  1. Preheat oven to 400°F
  2. Arrange cod fillets in a baking dish and lightly spray the fish with oil mister
  3. Sprinkle with herbes de Provence, black and red pepper
  4. Bake until firm, about 12-15 minutes, depending on the thickness of the fish fillets
  5. Remove from the oven

Serve baked cod with WATCHAREE’S Pad Thai sauce and roasted vegetables.
