This recipe was created by the extraordinary writer and recipe creator, Laura Sorkin. The sweetness of the mango and maple syrup are the perfect foil for the heat of the jalapeno and onion. Try to make it an hour ahead of serving to really let the flavors blend.
Also, try to dice all of the ingredients as small as possible otherwise you have big chunks of fruit and vegetables falling off your food.
- 1 ripe mango, peeled and diced
- 1 small jalapeno, minced
- 1 small red onion, peeled and diced
- ½ red pepper, diced
- Juice from ½ fresh lime
- 1 Tbsp Runamok Maple Rum Barrel-Aged Maple Syrup
- Salt and pepper to taste
- Combine all ingredients and chill for an hour
Makes about 2 cups of relish
