Paleo Butter Co was established in 2013 with one goal in mind: to create a delicious ghee alternative to butter that doesn't compromise flavor or richness.
In order to accomplish our goal, we set out in search for the best tasting grass fed butter we could find, but that wasn't so easy. Most butter is imported and though delicious, it's hard to compare both flavor and quality. Oversea butter conglomerates don't need more money. We wanted to control the process ourselves, and we wanted to give back to the American economy, especially to the American farmer.
That's when we decided to make it ourselves. Our process is time consuming and expensive, but we wouldn't have it any other way. Our grass fed cream comes from NYS farmers (since we're proud New Yorkers ourselves), and then we ferment the cream using exclusive enzymes not found in other cultured butters.
After 2-3 days (depending on the time of year), we churn the butter in small batches. The result is a delicious and exquisitely rich grass fed butter that's great on its own. Lastly though, in order to make it lactose free, we clarify it, removing all traces of milk solids and sugars. We think it's better than butter. In fact, that's why we named it 'butter.'
