Banana Cupcakes with Vanilla Cream Cheese Frosting

What an amazing combination - banana and vanilla cream cheese frosting!  Yum!  This recipe can be made into a 3-layer cake or a whole batch of cupcakes. This recipe was created by the amazing Liz Horne, author of the great baking blog "Sweet Things by Lizzie".  She explains that the key to the best and most intense banana flavor is allowing them to ripen until they are really brown. Letting bananas fully ripen brings out the sugar and caramel note and that’s when they become the perfect baking ingredient. Lizzie would know!  Her creations are simply delectable and the recipes are not complicated so the average home chef can recreate them successfully.  Enjoy!
