Banana Pineapple Bread

Liz Horne, author of the amazing baking blog "Sweet Things by Lizzie" was inspired to create this recipe after a trip with her husband to the amazing Bahamas resort "The One and Only Ocean Club".  The chef at the resort creates amazing breakfast pastries, and Liz loves to recreate these taste sensations in her kitchen and share the recipes with all of us.  Enjoy the sweet tropical flavor of this banana loaf with pineapple.


  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup undrained crushed pineapple
  • 3 eggs
  • 1 1/2 cups corn or 1 1/2 cups canola oil
  • 2 cups mashed ripe bananas
  • 2 teaspoons vanilla
  • 1 cup chopped nuts ( macadamia or Brazil are nice) (optional)


  1. Preheat oven to 350-degrees
  2. Combine first 5 ingredients
  3. Beat remaining ingredients together in a large bowl until blended
  4. Add dry ingredients stirring until thoroughly combined
  5. Spread in two greased 81/2×41/2 loaf pans dividing evenly
  6. Bake at 350°F for 60-70 minutes or until toothpick inserted in center comes out clean
  7. Cool 15 minutes in pan then remove to rack to cool completely

Makes: 1 loaf

Prep time: 25-minutes

Bake time: 60-70 minutes
