Chai Pumpkin Bread

Chai pumpkin bread is great in the morning with a steaming cup of coffee or tea.  In the afternoon, a slice of pumpkin bread is a great pick-me-up snack.  Have a loaf on hand when guests drop by or when you host that fun weekend brunch with friends.  It is easy to make and absolutely delicious.  

Ingredients

  • 2/3 cup Dona Chai Tea Concentrate
  • 1 1/2 sticks butter (12 Tbsp)
  • 3 Tbsp molasses
  • 2 cups sugar
  • 4 eggs
  • 2 cups pumpkin puree
  • 1 Tbsp baking powder
  • 2 Tbsp baking soda
  • 1 Tbsp salt
  • 3 1/3 cups all purpose flour
  • 1 Tbsp ground cinnamon

Preparation

  1. Preheat oven to 350-degrees
  2. Butter three 9x5-inch loaf pans
  3. Cream the butter, molasses and sugar with an electric mixer
  4. Beat in eggs, one at a time
  5. Add Dona Chai and pumpkin puree. Mix well
  6. In a separate bowl, combine dry ingredients
  7. Slowly incorporate into the pumpkin mixture. Stir well until just combined
  8. Pour batter into loaf pans
  9. Bake for one hour, or until a toothpick inserted comes out clean
  10. Cool in the pans for 10-minutes. Then turn out onto cooling racks to finish cooling
