Lemon Mint (Shrub) Pancakes
We followed @marthastewart's pancake recipe with a few modifications:
Half the sugar
Used Almond milk instead of cow's milk
Added lemon juice and lemon zest.
Added our Lemon Mint Shrub to the maple syrup
1 cup flour
1 tbsp sugar (vs.2 tbsp)
2 tsp baking powder
1/2 tsp salt
2 tbsp olive oil
1 1/4 cups almond milk (vs. one cup regular milk)
Zest and juice from one lemon (not part of the original recipe)
Freshly chopped mint (to add to the pancakes while they are cooking)
Lemon Mint Maple Syrup:
Top with grated lemon zest, dollops of Greek yogurt and a drizzle of lemon mint shrub maple.
