Pineapple Peanut Noodles
2 tbsp creamy peanut butter
2 tbsp hummus
1 tbsp tahini
3 tablespoons soy sauce
2 tablespoons Pineapple Turmeric Element Shrub
1 tbsp freshly grated ginger
2 tsp sesame seed oil
1 tbsp lime juice
1/2 tsp lime zest
Mix together in a bowl. Add noodles and toss.
1 tbsp olive oil
2 tbsp pineapple turmeric element shrub
1 tbsp fresh blood orange juice
Pinch of salt
Mix liquids together and soak cucumbers while you prep that sauce and boil the noodles.
Top with crispy garlic, fresh mint, roasted carrots (optional), sliced Asian pears and toasted sesame seeds.
Drizzle the cucumber marinade over the noodles.
